Iris Coffee - Cherigan

The Irish coffee, created by Joseph Sheridan, an Irish bartender, was born out of the need to warm up passengers on the giant seaplanes that passed through Foynes in Ireland during transatlantic flights connecting Europe to the United States. A strong and creamy cocktail was needed. The bitterness of the coffee enhanced by whiskey and mixed with sugar and cream made it an immediate success! To recapture this delightful, slightly powdery sensation, the delicacy of tonka bean was combined with that of iris, on a bed of coffee.
